Ingredients:
- 1.5 cups raw cashews
- 0.5 cup full-fat coconut milk
- 1 tbsp lemon juice
- 0.33 cup pure maple syrup
- 1 tsp pure vanilla bean paste
- 0.25 tsp fine sea salt
Instructions:
- Soak raw cashews in boiling water for 20 minutes, in cold water for 8 hours, or simmer for 10 minutes. Drain and rinse thoroughly until the water runs clear.
- Place the hydrated cashews, plant milk, lemon juice, maple syrup, vanilla, and salt into a high-speed blender. Start on the lowest speed, then gradually increase to the highest setting. Blend for 2 minutes until the mixture is completely smooth.
- Check consistency. For a pourable drizzle, add one tablespoon of milk at a time. For a thicker frosting, refrigerate for 15-30 minutes to allow the fats to firm up.
