Ingredients:

  • 2 cups (300g) fresh strawberries, hulled and finely diced
  • 1/4 cup (50g) granulated sugar
  • 1 tsp lemon juice, freshly squeezed
  • 1/4 tsp vanilla extract
  • 2 cups (480ml) whole milk, chilled
  • 2 tbsp (30ml) heavy cream
  • 1/2 cup ice cubes, crushed

Instructions:

  1. Dice the 2 cups (300g) of hulled strawberries into 1/4 inch pieces.
  2. Combine the diced strawberries and 1/4 cup (50g) sugar in a medium bowl.
  3. Use a fork to gently crush about 1/3 of the berries until a thick, glossy liquid forms.
  4. Stir in 1 tsp lemon juice and 1/4 tsp vanilla extract.
  5. Let the mixture sit for 5 minutes until the sugar is completely dissolved and the syrup is deep red.
  6. Place your serving glasses in the freezer for 2 minutes until a light frost appears.
  7. Divide the strawberry syrup evenly between the two glasses.
  8. Gently place 1/4 cup crushed ice into each glass.
  9. Mix 2 cups whole milk with 2 tbsp heavy cream in a separate pitcher.
  10. Slowly pour the milk mixture over the back of a spoon into the glasses until the white milk floats above the red syrup.
