Ingredients:
- 2 cups (300g) fresh strawberries, hulled and finely diced
- 1/4 cup (50g) granulated sugar
- 1 tsp lemon juice, freshly squeezed
- 1/4 tsp vanilla extract
- 2 cups (480ml) whole milk, chilled
- 2 tbsp (30ml) heavy cream
- 1/2 cup ice cubes, crushed
Instructions:
- Dice the 2 cups (300g) of hulled strawberries into 1/4 inch pieces.
- Combine the diced strawberries and 1/4 cup (50g) sugar in a medium bowl.
- Use a fork to gently crush about 1/3 of the berries until a thick, glossy liquid forms.
- Stir in 1 tsp lemon juice and 1/4 tsp vanilla extract.
- Let the mixture sit for 5 minutes until the sugar is completely dissolved and the syrup is deep red.
- Place your serving glasses in the freezer for 2 minutes until a light frost appears.
- Divide the strawberry syrup evenly between the two glasses.
- Gently place 1/4 cup crushed ice into each glass.
- Mix 2 cups whole milk with 2 tbsp heavy cream in a separate pitcher.
- Slowly pour the milk mixture over the back of a spoon into the glasses until the white milk floats above the red syrup.
