Ingredients:
- 2 cups (454g) Unsalted Butter, softened to room temperature
- 0.5 tsp (3g) Fine Sea Salt
- 7 cups (840g) Confectioners' Sugar, sifted
- 1 tbsp (15ml) Pure Vanilla Extract
- 3 tbsp (45ml) Heavy Cream
Instructions:
- Place the softened butter and salt into the bowl of a stand mixer fitted with a paddle attachment. Beat on medium-high speed for a full 5 minutes until the butter is pale, nearly white, and significantly increased in volume. Scrape the sides of the bowl halfway through.
- Turn the mixer to the lowest setting. Gradually add the sifted powdered sugar one cup at a time to prevent a sugar cloud. Once the sugar is incorporated, add the vanilla extract and heavy cream.
- Increase the speed to medium and beat for another 3–5 minutes until fluffy. To remove air bubbles for a smooth finish, turn the mixer to the lowest speed for 2 minutes or stir vigorously by hand with a silicone spatula to press the air out.
