Ingredients:

  • 2 cups (454g) Unsalted Butter, softened to room temperature
  • 0.5 tsp (3g) Fine Sea Salt
  • 7 cups (840g) Confectioners' Sugar, sifted
  • 1 tbsp (15ml) Pure Vanilla Extract
  • 3 tbsp (45ml) Heavy Cream

Instructions:

  1. Place the softened butter and salt into the bowl of a stand mixer fitted with a paddle attachment. Beat on medium-high speed for a full 5 minutes until the butter is pale, nearly white, and significantly increased in volume. Scrape the sides of the bowl halfway through.
  2. Turn the mixer to the lowest setting. Gradually add the sifted powdered sugar one cup at a time to prevent a sugar cloud. Once the sugar is incorporated, add the vanilla extract and heavy cream.
  3. Increase the speed to medium and beat for another 3–5 minutes until fluffy. To remove air bubbles for a smooth finish, turn the mixer to the lowest speed for 2 minutes or stir vigorously by hand with a silicone spatula to press the air out.
