Ingredients:

  • 1 lb fresh strawberries, stems removed
  • 1 cup green grapes, seedless
  • 2 cups granulated white sugar
  • 1 cup water
  • 1 tbsp corn syrup

Instructions:

  1. Wash the fruit and pat it bone dry with paper towels. Note: Any water on the skin will cause the sugar to slide off.
  2. Thread the strawberries and grapes onto wooden skewers until firmly secured.
  3. Combine 2 cups sugar, 1 cup water, and 1 tbsp corn syrup in a small saucepan. Note: Stir only once before turning on the heat.
  4. Heat the mixture over medium high heat until it begins to bubble vigorously.
  5. Boil the syrup without stirring for about 10 to 12 minutes until a candy thermometer reads 300°F.
  6. Observe the bubbles; they will transition from small and watery to large and slow popping until the syrup looks thick and clear.
  7. Prepare a large bowl with ice and water until it is freezing cold.
  8. Tilt the saucepan and quickly roll a fruit skewer in the syrup until completely and thinly coated.
  9. Immediately plunge the coated skewer into the ice bath for 5 seconds until the sugar shatters when tapped.
  10. Place the finished skewers on parchment paper until the surface is no longer tacky.
