Ingredients:
- 1 lb fresh strawberries, stems removed
- 1 cup green grapes, seedless
- 2 cups granulated white sugar
- 1 cup water
- 1 tbsp corn syrup
Instructions:
- Wash the fruit and pat it bone dry with paper towels. Note: Any water on the skin will cause the sugar to slide off.
- Thread the strawberries and grapes onto wooden skewers until firmly secured.
- Combine 2 cups sugar, 1 cup water, and 1 tbsp corn syrup in a small saucepan. Note: Stir only once before turning on the heat.
- Heat the mixture over medium high heat until it begins to bubble vigorously.
- Boil the syrup without stirring for about 10 to 12 minutes until a candy thermometer reads 300°F.
- Observe the bubbles; they will transition from small and watery to large and slow popping until the syrup looks thick and clear.
- Prepare a large bowl with ice and water until it is freezing cold.
- Tilt the saucepan and quickly roll a fruit skewer in the syrup until completely and thinly coated.
- Immediately plunge the coated skewer into the ice bath for 5 seconds until the sugar shatters when tapped.
- Place the finished skewers on parchment paper until the surface is no longer tacky.
