Ingredients:

  • 6 cups (900g) peeled and sliced peaches
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) ground nutmeg
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) whole milk or buttermilk
  • 1 tbsp (8g) melted butter
  • 1 tbsp (12g) granulated sugar
  • 1/2 tsp (1g) ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C). Pour the melted butter (1/2 cup) into a 9x13 inch baking dish, tilting the pan to ensure the bottom is fully coated.
  2. In a medium bowl, whisk together the flour, 1 cup sugar, baking powder, and salt. Slowly stir in the milk or buttermilk until the batter is smooth, being careful not to overmix.
  3. Pour the batter directly over the melted butter in the baking dish. Do not stir the layers.
  4. Toss the sliced peaches with 1/2 cup sugar, lemon juice, 1 tsp cinnamon, and nutmeg. Gently spoon the peach mixture over the top of the batter.
  5. Brush the top lightly with 1 tbsp melted butter and sprinkle with the remaining granulated sugar and cinnamon mixture.
  6. Bake for 40-45 minutes until the crust is deep golden brown and the peach juices are bubbling around the edges.
