Ingredients:
- 6 cups (900g) peeled and sliced peaches
- 1/2 cup (100g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1g) ground nutmeg
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (240ml) whole milk or buttermilk
- 1 tbsp (8g) melted butter
- 1 tbsp (12g) granulated sugar
- 1/2 tsp (1g) ground cinnamon
Instructions:
- Preheat the oven to 350°F (175°C). Pour the melted butter (1/2 cup) into a 9x13 inch baking dish, tilting the pan to ensure the bottom is fully coated.
- In a medium bowl, whisk together the flour, 1 cup sugar, baking powder, and salt. Slowly stir in the milk or buttermilk until the batter is smooth, being careful not to overmix.
- Pour the batter directly over the melted butter in the baking dish. Do not stir the layers.
- Toss the sliced peaches with 1/2 cup sugar, lemon juice, 1 tsp cinnamon, and nutmeg. Gently spoon the peach mixture over the top of the batter.
- Brush the top lightly with 1 tbsp melted butter and sprinkle with the remaining granulated sugar and cinnamon mixture.
- Bake for 40-45 minutes until the crust is deep golden brown and the peach juices are bubbling around the edges.
