Ingredients:
- 2 lbs (900g) boneless, skinless chicken thighs
- 3 cups (710ml) chicken bone broth
- 1 cup (150g) carrots, diced
- 1 cup (100g) celery, diced
- 1 cup (150g) yellow onion, diced
- 2 medium (300g) Yukon Gold potatoes, cubed small
- 3 cloves (15g) garlic, minced
- 1 tsp (2g) dried thyme
- 1 bay leaf
- 1 tsp (6g) salt
- ½ tsp (3g) black pepper
- 1 cup (150g) frozen peas
- 3 tbsp (24g) cornstarch
- 3 tbsp (45ml) cold water
- 1 sheet (250g) frozen puff pastry, thawed
- 1 egg (50g), beaten for wash
- 1 tbsp (15g) melted butter
Instructions:
- Place the diced onion, carrots, celery, and potatoes at the bottom of the slow cooker.
- Lay the chicken thighs over the vegetables.
- Stir together the chicken broth, garlic, thyme, salt, and pepper, then pour over the chicken. Add the bay leaf on top.
- Cover and cook on Low for 6 hours or High for 3-4 hours until the chicken is tender enough to shred with a fork.
- Remove the chicken thighs to a plate and shred them using two forks.
- Remove and discard the bay leaf. Stir in the frozen peas.
- In a small bowl, whisk the cornstarch and cold water until completely smooth.
- Stir the slurry into the bubbling slow cooker liquid. Cover and cook on High for an additional 20-30 minutes until the sauce is thick and velvety.
- Fold the shredded chicken back into the sauce.
- Preheat your oven to 400°F (200°C). Roll out the puff pastry and drape it over the top of the slow cooker (if oven-safe) or bake it on a separate sheet.
- Brush the pastry with the beaten egg wash and melted butter and bake until golden brown.
