Ingredients:
- 1.5 cups (180g) all-purpose flour
- 0.75 cup (150g) cane sugar
- 1 tsp (5g) baking powder
- 0.5 tsp (3g) baking soda
- 0.25 tsp (1g) salt
- 1 cup (245g) plain Greek yogurt
- 2 large eggs
- 0.33 cup (80ml) neutral oil
- 1 tsp (5ml) vanilla extract
- 1 tbsp (6g) lemon zest
- 2 cups (300g) fresh peaches, thinly sliced
- 1 tbsp (8g) turbinado sugar
Instructions:
- Preheat your oven to 350°F (175°C). Grease your pan and line the bottom with parchment paper.
- In a large bowl, whisk together the eggs and cane sugar until the mixture is light and pale.
- Stir in the Greek yogurt, oil, vanilla extract, and lemon zest until the batter is smooth and velvety.
- Gently fold in the flour, baking powder, baking soda, and salt. Mix only until no streaks of flour remain.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Arrange the peach slices in a concentric circle on top of the batter, pressing them in gently.
- Sprinkle the turbinado sugar evenly over the peaches.
- Bake for 45–50 minutes until the edges are deep golden brown and a toothpick inserted into the center comes out clean.
