Ingredients:
- 1 lb lean ground beef (90% lean)
- 1 tbsp olive oil
- 1/2 cup beef broth
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 small corn tortillas
- 2 cups shredded iceberg lettuce
- 1 cup diced Roma tomatoes
- 1/2 cup shredded cheddar cheese
Instructions:
- In a small bowl, whisk together the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Add the ground beef in a flat layer and sear undisturbed for 4 minutes until the bottom is deep mahogany brown.
- Use a spatula to break the meat into small crumbles and cook until no pink remains.
- Sprinkle the prepared spice blend over the beef and stir for 1 minute to toast the spices.
- Pour in the beef broth. Reduce heat to medium-low and simmer for 5 minutes, stirring occasionally, until the liquid reduces into a thick, glossy sauce.
- Assemble the tacos by filling tortillas with the beef mixture and topping with shredded lettuce, diced tomatoes, and shredded cheddar cheese.
