Ingredients:
- 6 medium ripe peaches (approx. 3 lbs / 1.36 kg), halved and pitted
- 4 tbsp (56g) unsalted butter, melted
- 1/4 cup (50g) light brown sugar, packed
- 1/2 tsp (1g) ground cinnamon
- 1 tsp (5ml) vanilla extract
- pinch (0.5g) salt
Instructions:
- Preheat your oven to 400°F (200°C). Slice the peaches in half and remove the pits.
- Place the peach halves cut-side up in a 9x13 inch baking dish or cast-iron skillet, ensuring they are snug but not overlapping.
- In a small bowl, whisk together the melted butter, brown sugar, cinnamon, vanilla extract, and salt until the sugar is mostly dissolved and the mixture is a smooth syrup.
- Spoon or brush the glaze generously into the center of each peach half.
- Bake for 12–15 minutes until the edges of the peaches soften and the glaze bubbles into a thick consistency.
- Remove the pan from the oven. Let them sit for 2 minutes so the sauce thickens slightly.
- Spoon the remaining pan juices over the fruit before serving.
- Serve warm or at room temperature.
