Ingredients:

  • 6 medium ripe peaches (approx. 3 lbs / 1.36 kg), halved and pitted
  • 4 tbsp (56g) unsalted butter, melted
  • 1/4 cup (50g) light brown sugar, packed
  • 1/2 tsp (1g) ground cinnamon
  • 1 tsp (5ml) vanilla extract
  • pinch (0.5g) salt

Instructions:

  1. Preheat your oven to 400°F (200°C). Slice the peaches in half and remove the pits.
  2. Place the peach halves cut-side up in a 9x13 inch baking dish or cast-iron skillet, ensuring they are snug but not overlapping.
  3. In a small bowl, whisk together the melted butter, brown sugar, cinnamon, vanilla extract, and salt until the sugar is mostly dissolved and the mixture is a smooth syrup.
  4. Spoon or brush the glaze generously into the center of each peach half.
  5. Bake for 12–15 minutes until the edges of the peaches soften and the glaze bubbles into a thick consistency.
  6. Remove the pan from the oven. Let them sit for 2 minutes so the sauce thickens slightly.
  7. Spoon the remaining pan juices over the fruit before serving.
  8. Serve warm or at room temperature.
