Ingredients:
- 1 lb flank steak, thinly sliced against the grain
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 1 tsp toasted sesame oil
- 3 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tbsp freshly grated ginger
- 3 cloves garlic, minced
- ½ tsp black pepper
- 2 tbsp neutral oil
- 1 bunch green onions, cut into 2-inch lengths
- 1 tsp toasted sesame seeds
Instructions:
- Slice the beef thinly against the grain. In a bowl, toss the beef with 1 tbsp soy sauce, cornstarch, and sesame oil. Let it marinate for 5-10 minutes.
- Heat 1 tbsp of neutral oil in a wok over high heat until smoking. Sear the beef in a single layer for 1-2 minutes until a deep brown crust forms, flip and sear for another minute, then remove and set aside.
- Lower heat to medium-high and add the remaining 1 tbsp of oil. Sauté the white parts of the green onions, garlic, and ginger for 30 seconds.
- Pour in the mixture of 3 tbsp soy sauce, brown sugar, rice vinegar, and black pepper. Stir for 1 minute until glossy and thickened.
- Return the beef and its juices to the pan. Add the green parts of the scallions and stir-fry for 30 seconds until coated and greens are just wilted.
- Garnish with toasted sesame seeds before serving.
