Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked white rice
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 cups shredded cheddar cheese
  • 1/2 cup panko breadcrumbs
  • 2 tbsp melted butter

Instructions:

  1. Heat olive oil in the skillet over medium-high heat. Add the ground beef, breaking it apart with a spoon. Cook until the meat reaches a deep brown color.
  2. Stir in the diced onion and garlic, sautéing for 3-5 minutes until the onions are translucent and the beef smells nutty and toasted.
  3. Lower the heat to medium. Stir in the smoked paprika, salt, pepper, and Worcestershire sauce.
  4. Fold in the drained diced tomatoes and cooked rice. Pour in the beef broth and stir for 2 minutes until the liquid is slightly reduced and the mixture is glossy.
  5. Transfer the beef mixture into a 9x13 inch baking dish, spreading it evenly.
  6. Layer the shredded cheddar cheese across the top.
  7. In a small bowl, mix melted butter with panko breadcrumbs and sprinkle evenly over the cheese.
  8. Bake at 400°F (200°C) for 15-20 minutes until the cheese is bubbling and the crust is golden brown.
