Ingredients:
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked white rice
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 2 cups shredded cheddar cheese
- 1/2 cup panko breadcrumbs
- 2 tbsp melted butter
Instructions:
- Heat olive oil in the skillet over medium-high heat. Add the ground beef, breaking it apart with a spoon. Cook until the meat reaches a deep brown color.
- Stir in the diced onion and garlic, sautéing for 3-5 minutes until the onions are translucent and the beef smells nutty and toasted.
- Lower the heat to medium. Stir in the smoked paprika, salt, pepper, and Worcestershire sauce.
- Fold in the drained diced tomatoes and cooked rice. Pour in the beef broth and stir for 2 minutes until the liquid is slightly reduced and the mixture is glossy.
- Transfer the beef mixture into a 9x13 inch baking dish, spreading it evenly.
- Layer the shredded cheddar cheese across the top.
- In a small bowl, mix melted butter with panko breadcrumbs and sprinkle evenly over the cheese.
- Bake at 400°F (200°C) for 15-20 minutes until the cheese is bubbling and the crust is golden brown.
