Ingredients:

  • 12 oz pre-cooked chicken apple sausage, sliced into rounds
  • 1 lb sweet potato, peeled and diced into 1/2 inch cubes
  • 1 lb brussels sprouts, trimmed and halved
  • 1 medium red onion, cut into 1-inch wedges
  • 3 tbsp extra virgin olive oil
  • 1 tbsp pure maple syrup
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Heat the oven. Set your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Prep the produce. Place the diced sweet potatoes, halved Brussels sprouts, onion wedges, and sliced sausage in a large bowl.
  3. Mix the glaze. Whisk the olive oil, maple syrup, garlic powder, salt, and black pepper in a small bowl.
  4. Coat the mix. Pour the glaze over the ingredients and toss with your hands or a spoon until every piece is glistening.
  5. Arrange the pan. Spread the mixture across the sheet pan in a single layer. Note: Leave space between the pieces so they roast instead of steam.
  6. Roast the tray. Bake for 25–30 minutes until the sweet potatoes are fork tender and the sprouts are deep charred brown.
  7. Final rest. Remove from the oven and let the meal rest for 2 minutes to let the glaze set.
