Ingredients:
- 12 oz pre-cooked chicken apple sausage, sliced into rounds
- 1 lb sweet potato, peeled and diced into 1/2 inch cubes
- 1 lb brussels sprouts, trimmed and halved
- 1 medium red onion, cut into 1-inch wedges
- 3 tbsp extra virgin olive oil
- 1 tbsp pure maple syrup
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
Instructions:
- Heat the oven. Set your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Prep the produce. Place the diced sweet potatoes, halved Brussels sprouts, onion wedges, and sliced sausage in a large bowl.
- Mix the glaze. Whisk the olive oil, maple syrup, garlic powder, salt, and black pepper in a small bowl.
- Coat the mix. Pour the glaze over the ingredients and toss with your hands or a spoon until every piece is glistening.
- Arrange the pan. Spread the mixture across the sheet pan in a single layer. Note: Leave space between the pieces so they roast instead of steam.
- Roast the tray. Bake for 25–30 minutes until the sweet potatoes are fork tender and the sprouts are deep charred brown.
- Final rest. Remove from the oven and let the meal rest for 2 minutes to let the glaze set.
