Ingredients:
- 1 ¾ cups (210g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (2g) salt
- 1 tbsp (6g) pumpkin pie spice
- ½ cup (110g) vegetable oil
- ¾ cup (150g) packed light brown sugar
- 2 large eggs (100g)
- 1 cup (245g) pumpkin puree
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) full-fat cream cheese, softened
- ¼ cup (50g) granulated sugar
- 1 large egg (50g)
- ½ tsp (2.5ml) vanilla extract
- 0.5g salt
Instructions:
- In a medium bowl, cream together the softened cream cheese and granulated sugar until smooth and aerated.
- Add the egg, vanilla, and salt to the cream cheese mixture. Mix on medium speed until the filling is glossy and uniform.
- In a large bowl, combine the flour, baking soda, salt, and pumpkin pie spice, ensuring no clumps remain.
- In a separate bowl, whisk together the oil, brown sugar, eggs, pumpkin puree, and vanilla until a smooth, deep orange emulsion forms.
- Gently fold the dry ingredients into the wet ingredients using a spatula until no streaks of flour remain.
- Fill each muffin liner halfway with pumpkin batter.
- Spoon 1 generous tablespoon of the cream cheese mixture directly into the center of the batter.
- Top with another small dollop of pumpkin batter to lock the cream cheese inside.
- Bake at 375°F (190°C) for 18–22 minutes, or until the edges are set and a toothpick inserted into the cake part comes out clean.
- Let muffins rest in the pan for 5 minutes before transferring to a wire rack.
