- 1 cup (245g) pumpkin puree
- 3/4 cup (150g) granulated sugar
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) cream cheese, softened
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 1/4 cup (30g) pecans, finely chopped
- 2 tbsp (16g) brown sugar
- 1 tsp (2g) ground cinnamon
Instructions:
- In a large bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt until no clumps remain.
- In a medium bowl, whisk the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract until the mixture is smooth and glossy.
- Pour the wet ingredients into the dry ingredients and fold gently with a spatula until just combined; do not overmix.
- In a clean bowl, beat the softened cream cheese and granulated sugar until creamy.
- Incorporate the egg and vanilla extract into the cream cheese mixture, mixing until the filling is a consistent pale ivory color with no lumps.
- Divide the pumpkin batter among 24 lined muffin tins.
- Using a piping bag, inject the cream cheese filling into the center of each muffin.
- Combine chopped pecans, brown sugar, and cinnamon, then sprinkle over the tops of the muffins.
- Bake for 18 minutes or until a toothpick inserted into the cake portion comes out clean.
