Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (245g) pumpkin puree
- 3/4 cup (150g) granulated sugar
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tbsp pumpkin pie spice
- 1/2 tsp salt
- 8 oz (225g) cream cheese, softened
- 1/4 cup (30g) powdered sugar
- 1 tsp vanilla extract
- 1 egg yolk
- 2 tbsp brown sugar
- 1/2 tsp cinnamon
- 1/4 cup (30g) chopped pecans
Instructions:
- Preheat the oven to 375°F (190°C) and line muffin tins with liners.
- In a large bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
- In a separate bowl, whisk the pumpkin puree, vegetable oil, granulated sugar, and eggs until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined, ensuring no flour streaks remain.
- Using a hand mixer, beat the softened cream cheese and powdered sugar until smooth.
- Mix the vanilla extract and egg yolk into the cream cheese mixture.
- Fill each muffin liner halfway with the pumpkin batter.
- Place one generous tablespoon of the cream cheese mixture into the center of each muffin.
- Cover the filling with the remaining pumpkin batter.
- Use a toothpick to gently swirl the cream cheese into the batter for a marble effect.
- Sprinkle the mixture of brown sugar, cinnamon, and chopped pecans over the tops.
- Bake for 18–22 minutes, or until a toothpick inserted into the pumpkin part comes out clean.
- Allow muffins to cool for 10 minutes before serving.
