Ingredients:

  • 2 tbsp dried osmanthus flowers
  • 1 tbsp dried goji berries
  • 6-8 pieces dried longan, finely chopped
  • 1 liter filtered water
  • 10g agar-agar powder
  • 130g rock sugar

Instructions:

  1. Bring 1 liter of water to a boil in a medium saucepan. Add the rock sugar. Stir continuously until the sugar is completely dissolved.
  2. Turn off the heat and stir in 2 tbsp of the dried osmanthus flowers. Cover the pot with a lid and let it steep for 3 minutes to extract the floral essence without evaporating the oils.
  3. Whisk in the 10g of agar-agar powder until fully incorporated. Turn the heat back to low and simmer for 2 minutes to ensure the agar-agar is completely activated.
  4. Stir in the 1 tbsp of dried goji berries and the 6-8 chopped dried longans. Let them sit in the hot liquid for 2 minutes until the goji berries look plump and bright red.
  5. Allow the liquid to cool in the pot until it reaches a light syrupy consistency. This 'partial set' prevents the flowers and berries from sinking to the bottom. Pour the mixture into a 7x7 inch glass mold.
  6. Refrigerate for at least 2 hours until firm. Slice into cubes and serve chilled.
