Ingredients:
- 2 cans (15 oz / 425g each) sliced peaches in heavy syrup, undrained
- 1/2 cup (100g) granulated sugar
- 1 tbsp (8g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1 cup (125g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 2 tsp (10g) baking powder
- 1/4 tsp (1.5g) salt
- 3/4 cup (180ml) whole milk
- 6 tbsp (85g) unsalted butter, melted
Instructions:
- Preheat your oven to 350°F (175°C).
- In a 9x13 inch baking dish, combine the sliced peaches with their syrup, sugar, cornstarch, cinnamon, and lemon juice.
- Stir the peach mixture gently until the cornstarch is fully dissolved and the peaches are evenly coated.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Pour in the milk and melted butter, then stir until just combined; the batter should be thick but pourable.
- Pour the batter evenly over the peach mixture without stirring the two layers together.
- Bake for 40–45 minutes until the crust is golden-brown.
