Ingredients:
- 4 1-inch thick Bone-in Center-Cut Pork Chops (room temperature)
- 1 tbsp Avocado oil
- 1 tsp Smoked Paprika
- 1 tsp Onion Powder
- 0.5 tsp Garlic Powder
- 0.5 tsp Coarse Black Pepper
- 0.5 cup Dark Brown Sugar (packed)
- 2 tbsp Low-Sodium Soy Sauce
- 3 tbsp Unsalted Butter
- 3 cloves Garlic (smashed and peeled)
- 1 tsp Worcestershire sauce
- 0.5 tsp Red pepper flakes
Instructions:
- Pat the pork chops bone-dry with paper towels to ensure a crispy sear.
- Mix smoked paprika, onion powder, garlic powder, and black pepper. Rub the mixture evenly onto both sides of the pork chops.
- Heat avocado oil in a 12-inch cast iron skillet over medium-high heat until shimmering. Sear chops for 3–4 minutes per side until a deep golden-brown crust forms.
- Reduce heat to medium. Add butter and smashed garlic cloves to the pan.
- Whisk together brown sugar, soy sauce, and Worcestershire sauce in a small bowl. Pour the mixture directly over the chops in the skillet.
- Using a spoon, continuously baste the chops with the bubbling glaze for 2-3 minutes until the internal temperature reaches 145°F.
- Remove chops from the pan and let them rest for 5 minutes before serving to allow juices to redistribute.
