Ingredients:

  • 2 large Granny Smith apples, Diced into 1/4 inch chunks
  • 15g Lemon juice
  • 2g ground cinnamon
  • 1g ground nutmeg
  • 250g All purpose flour
  • 50g Granulated sugar
  • 10g baking powder
  • 3g salt
  • 180ml whole milk, room temperature
  • 2 large eggs, room temperature
  • 30g unsalted butter, melted and cooled
  • 1 liter neutral oil for frying
  • 240g powdered sugar
  • 45ml apple cider or whole milk
  • 5ml pure vanilla extract

Instructions:

  1. In a medium bowl, toss the diced apples with lemon juice, cinnamon, and nutmeg. Let the mixture sit for 5 minutes to allow a light syrup to form.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In a separate jug or bowl, whisk together the room temperature milk, eggs, and melted cooled butter.
  4. Pour the wet ingredients into the dry ingredients. Use a spatula to fold the mixture until just combined, keeping the batter lumpy and avoiding over-mixing.
  5. Gently fold the spiced apple chunks into the batter.
  6. Heat the neutral oil in a heavy-bottomed Dutch oven to exactly 350°F (175°C). Drop 1/4 cup portions of batter into the oil, flattening them slightly with the back of a spoon.
  7. Fry for 2-3 minutes per side until the exterior is a deep mahogany brown and the fritter is cooked through. Remove with a spider strainer and drain on a wire rack.
  8. Whisk the powdered sugar, apple cider (or milk), and vanilla extract together to create the glaze. Dip the warm fritters into the glaze and return to the wire rack to set into a shattering crust.
