Ingredients:
- 1 cup (90g) oat flour
- 1 cup (110g) almond flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) baking powder
- 1 tbsp (6g) ground cinnamon
- ½ tsp (1g) ground ginger
- ¼ tsp (1g) ground cloves
- ¼ tsp (1.5g) salt
- 1 cup (245g) pumpkin puree (unsweetened)
- ½ cup (120g) plain Greek yogurt
- ⅓ cup (80ml) pure maple syrup
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) melted coconut oil
Instructions:
- Preheat your oven to 350°F (175°C). Line your muffin tin with paper liners or grease it thoroughly with non-stick spray.
- In a large mixing bowl, whisk together the oat flour, almond flour, baking soda, baking powder, ground cinnamon, ground ginger, ground cloves, and salt until well combined and clump-free.
- Add the pumpkin puree, Greek yogurt, maple syrup, egg, vanilla extract, and melted coconut oil directly into the dry ingredients.
- Use a silicone spatula to gently fold the mixture until just combined. Avoid over-mixing to ensure a tender texture.
- Scoop the batter evenly into 12 muffin cups.
- Bake for 22–25 minutes, or until the tops are mahogany-colored and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
