Ingredients:
- 2 cups (280g) Gluten-Free All-Purpose Flour blend
- 1 tbsp (12g) Baking powder
- 1 tsp (5g) Baking soda
- 2 tsp (5g) Pumpkin pie spice
- 1/2 tsp (3g) Salt
- 1 cup (245g) Pumpkin puree
- 3/4 cup (150g) Brown sugar
- 1/2 cup (120ml) Avocado oil
- 2 large (100g) Eggs
- 1 tsp (5ml) Vanilla extract
- 8 oz (225g) Cream cheese
- 1/4 cup (30g) Powdered sugar
- 1 tsp (5ml) Vanilla extract
- 1 pinch (1g) Salt
Instructions:
- In a medium bowl, beat the softened cream cheese, powdered sugar, vanilla, and salt using a hand mixer until the texture is velvety and lump-free.
- Transfer the cream cheese mixture into a piping bag or Ziploc bag with the corner snipped.
- Preheat your oven to 375°F (190°C).
- In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, pumpkin spice, and salt until combined.
- Add the pumpkin puree, brown sugar, oil, eggs, and vanilla to the flour mixture. Beat on medium speed until the batter is smooth.
- Fill each muffin liner about 1/3 of the way with pumpkin batter.
- Pipe a generous swirl of cream cheese filling into the center of each muffin.
- Top with another layer of pumpkin batter until the liners are 3/4 full.
- Bake for 18-22 minutes, or until a toothpick inserted into the pumpkin part comes out clean.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack.
