Ingredients:
- 16 oz frozen peach slices, thawed and drained
- 1/2 cup brown sugar, packed
- 1 tbsp cornstarch
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp lemon juice
- 1/2 cup unsalted butter, melted
- 1 cup self-rising flour
- 1/2 cup granulated sugar
- 3/4 cup whole milk
- 1 tsp vanilla extract
- 1 tbsp granulated sugar
Instructions:
- Place frozen peaches in a colander for 20 minutes to thaw, then gently pat them with a paper towel to remove excess surface moisture.
- In a mixing bowl, toss the thawed peaches with brown sugar, cornstarch, cinnamon, nutmeg, and lemon juice until every slice is coated.
- Pour the peach mixture into a 9x9 inch baking dish, spreading it evenly to the edges.
- Pour the melted butter into the bottom of the baking dish or incorporate it into the batter as preferred.
- In a bowl, combine self-rising flour and 1/2 cup granulated sugar, then stir in the milk and vanilla extract until just combined.
- Spoon the batter over the peaches in small mounds to create crispy peaks.
- Sprinkle the remaining tablespoon of granulated sugar over the top of the batter.
- Bake at 350°F (175°C) for 35–40 minutes until the topping is deep mahogany-gold and the peach juices are bubbling.
