Ingredients:

  • 16 oz frozen peach slices, thawed and drained
  • 1/2 cup brown sugar, packed
  • 1 tbsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1/2 cup unsalted butter, melted
  • 1 cup self-rising flour
  • 1/2 cup granulated sugar
  • 3/4 cup whole milk
  • 1 tsp vanilla extract
  • 1 tbsp granulated sugar

Instructions:

  1. Place frozen peaches in a colander for 20 minutes to thaw, then gently pat them with a paper towel to remove excess surface moisture.
  2. In a mixing bowl, toss the thawed peaches with brown sugar, cornstarch, cinnamon, nutmeg, and lemon juice until every slice is coated.
  3. Pour the peach mixture into a 9x9 inch baking dish, spreading it evenly to the edges.
  4. Pour the melted butter into the bottom of the baking dish or incorporate it into the batter as preferred.
  5. In a bowl, combine self-rising flour and 1/2 cup granulated sugar, then stir in the milk and vanilla extract until just combined.
  6. Spoon the batter over the peaches in small mounds to create crispy peaks.
  7. Sprinkle the remaining tablespoon of granulated sugar over the top of the batter.
  8. Bake at 350°F (175°C) for 35–40 minutes until the topping is deep mahogany-gold and the peach juices are bubbling.
