Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup whole milk
- 1 tsp pure vanilla extract
- 3 medium fresh peaches, peeled and sliced
- 1/4 cup light brown sugar, packed
- 1/2 tsp ground cinnamon
- 1 tbsp fresh lemon juice
Instructions:
- Peel the peaches (blanching them in boiling water for 30 seconds makes the skin slide off effortlessly) and slice them into uniform 1/2-inch wedges.
- In a small bowl, toss the peach slices with lemon juice, brown sugar, and cinnamon. Let them sit for 10 minutes.
- In a mixer, whisk together flour, granulated sugar, baking powder, and salt.
- Add the softened butter one tablespoon at a time on low speed. Mix until the texture resembles coarse sand.
- Whisk the eggs, milk, and vanilla together in a separate jug. Pour this into the flour mixture on medium speed for 60 seconds until the batter is pale and fluffy.
- Pour the batter into a greased and parchment-lined 9-inch round cake pan. Arrange the peach slices on top in a concentric circle, pressing them slightly into the surface.
- Bake at 350°F (175°C) for 45 to 55 minutes until the cake is set.
- Allow the cake to cool for 60 minutes before slicing.
