Ingredients:

  • 2 lbs fresh, ripe peaches, peeled and sliced
  • 2 tbsp lemon juice
  • 1/4 cup granulated sugar
  • 2 cups heavy whipping cream, chilled
  • 1 cup whole milk, chilled
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp fine sea salt

Instructions:

  1. Combine sliced peaches, lemon juice, and 1/4 cup sugar in a saucepan. Simmer over medium heat for 8-10 minutes until the liquid reduces and the peaches are soft. Blend until smooth.
  2. In a large bowl, whisk together the whole milk, 3/4 cup sugar, vanilla, and salt until the sugar has completely dissolved. Slowly stir in the heavy cream.
  3. Fold the cooled peach puree into the cream base. Cover and refrigerate for at least 4 hours (or overnight).
  4. For Ice Cream Maker: Pour the chilled mixture into your machine and churn according to manufacturer directions until it reaches a soft serve consistency. For No-Machine Method: Pour into a shallow container and stir vigorously with a fork every 45 minutes until firm.
