Ingredients:
- 2 lbs fresh, ripe peaches, peeled and sliced
- 2 tbsp lemon juice
- 1/4 cup granulated sugar
- 2 cups heavy whipping cream, chilled
- 1 cup whole milk, chilled
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 tsp fine sea salt
Instructions:
- Combine sliced peaches, lemon juice, and 1/4 cup sugar in a saucepan. Simmer over medium heat for 8-10 minutes until the liquid reduces and the peaches are soft. Blend until smooth.
- In a large bowl, whisk together the whole milk, 3/4 cup sugar, vanilla, and salt until the sugar has completely dissolved. Slowly stir in the heavy cream.
- Fold the cooled peach puree into the cream base. Cover and refrigerate for at least 4 hours (or overnight).
- For Ice Cream Maker: Pour the chilled mixture into your machine and churn according to manufacturer directions until it reaches a soft serve consistency. For No-Machine Method: Pour into a shallow container and stir vigorously with a fork every 45 minutes until firm.
