Ingredients:
- 1 lb (450g) butternut squash, peeled and cubed into ½ inch pieces
- 2 tbsp (30ml) olive oil
- ½ tsp (3g) kosher salt
- ¼ tsp (1g) black pepper
- 2 tbsp (28g) unsalted butter
- 1 medium (110g) yellow onion, finely diced
- 3 cloves (15g) garlic, minced
- 1 ½ cups (300g) uncooked orzo pasta
- 3 cups (710ml) vegetable broth, warm
- ½ cup (50g) grated Parmesan cheese
- 2 cups (60g) fresh baby spinach, packed
- 1 tbsp (15ml) fresh lemon juice
- 2 tbsp (30g) fresh parsley, chopped
Instructions:
- Toss the cubed butternut squash with olive oil, salt, and pepper on a sheet pan. Roast at 400°F (200°C) for 20-25 minutes until the edges are mahogany-colored and tender.
- Blend half of the roasted squash with a splash of vegetable broth until smooth; set the remaining whole roasted cubes aside.
- Melt butter in a large skillet over medium heat. Add the diced onion and sauté until translucent.
- Stir in the minced garlic and uncooked orzo. Stir constantly for 2-3 minutes until the orzo smells nutty and looks lightly golden.
- Pour in the warm vegetable broth and the blended squash puree. Reduce heat to low and simmer, stirring occasionally, for 10-12 minutes until the liquid is mostly absorbed and the sauce is thick and glossy.
- Stir in the remaining whole roasted squash cubes, Parmesan cheese, and baby spinach. Remove from heat as soon as the spinach wilts.
- Stir in the fresh lemon juice and chopped parsley to brighten the flavors.
