  • 1/2 cup (100g) Granulated White Sugar
  • 1/2 cup (100g) Packed Light Brown Sugar
  • 3/4 cup (190g) Creamy Peanut Butter
  • 1 Large Egg, room temperature
  • 1 tsp Pure Vanilla Extract
  • 1 1/4 cups (155g) All-Purpose Flour
  • 3/4 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/4 tsp Fine Sea Salt
  • Extra granulated sugar, for rolling

Instructions:

  1. Cream the softened butter with granulated sugar and light brown sugar in a stand mixer on medium high speed for at least 3 minutes until pale and fluffy. Note: This step builds the air structure.
  2. Add the creamy peanut butter and mix until fully integrated and smooth.
  3. Add the egg and vanilla extract, scraping the bowl to ensure no streaks remain.
  4. In a separate medium bowl, whisk together the flour, baking soda, baking powder, and fine sea salt until no lumps are visible.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Note: Overmixing here will make the cookies tough.
  6. Chill the dough in the refrigerator for 20 minutes until firm to the touch.
  7. Preheat your oven to 350°F (175°C) and line two large rimmed baking sheets with parchment paper.
  8. Using a 1.5 tablespoon cookie scoop, form the dough into balls and roll them in extra sugar for a sparkling finish.
  9. Place balls 2 inches apart and use a fork to create a crosshatch pattern, pressing down firmly but gently.
  10. Bake for 10 minutes until the edges are mahogany brown but the centers still look slightly soft.
