Ingredients:

  • 6 medium fresh peaches (approx. 3 lbs / 1.36kg)
  • 4 tbsp (57g) unsalted butter, melted
  • 1/3 cup (65g) packed light brown sugar
  • 1 tsp (2g) ground cinnamon
  • 1 tsp (5ml) pure vanilla extract
  • 1/4 tsp (1.5g) salt

Instructions:

  1. Preheat the oven to 375°F (190°C). Carefully slice the peaches in half and remove the pits.
  2. Place the peach halves cut-side up in a 9x13 inch baking dish, ensuring they are snug but not overlapping.
  3. In a small bowl, whisk together the melted butter, brown sugar, cinnamon, vanilla extract, and salt until the mixture is a uniform, sandy paste.
  4. Spoon equal amounts of the cinnamon mixture into the center of each peach half, pressing slightly so the glaze fills the cavity.
  5. Bake for 15 to 20 minutes until the edges of the peaches turn a deep mahogany color and the sugar is bubbling and syrupy.
