Ingredients:

  • 2.5 tbsp cream cheese, softened
  • 1 tsp honey
  • 1/4 tsp ground cinnamon
  • 1 large flour tortilla
  • 1/4 cup fresh blueberries
  • 0.5 tbsp unsalted butter

Instructions:

  1. In a small mixing bowl, briskly stir the softened cream cheese, honey, and cinnamon until the mixture is velvety and uniform.
  2. Spread the cream cheese mixture over the entire surface of one side of the tortilla, ensuring it reaches the very edges to act as a sealant.
  3. Place the blueberries on one half of the tortilla. Gently press down on the berries with the back of a spoon to slightly bruise them.
  4. Fold the tortilla in half over the filling.
  5. Melt the butter in a 10-inch non-stick skillet over medium-high heat.
  6. Place the quesadilla in the pan and sear for approximately 1.5 minutes per side until the exterior is mahogany-colored and crisp, and the berries have reached their bursting point.
