Ingredients:
- 2 medium ripe bananas, mashed (approx. 170g)
- 1/2 cup pumpkin puree (120ml)
- 1/4 cup maple syrup (60ml)
- 1 large egg
- 1/4 cup plain Greek yogurt (60g)
- 1 tsp vanilla extract (5ml)
- 1 1/2 cups whole wheat pastry flour (190g)
- 1/2 tsp baking soda (3g)
- 1 tsp baking powder (5g)
- 1/2 tsp salt (3g)
- 1 tbsp pumpkin pie spice (6g)
- 1/2 cup dark chocolate chips (75g)
Instructions:
- Preheat your oven to 350°F (175°C). Line a 12-cup standard muffin tin with liners or grease them thoroughly to prevent sticking.
- In a large bowl, whisk together the mashed bananas, pumpkin puree, maple syrup, egg, Greek yogurt, and vanilla until the mixture is velvety and completely integrated.
- In a medium bowl, sift together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
- Gently fold the dry ingredients into the wet base using a spatula. Stop as soon as no more dry flour streaks are visible to avoid over-mixing.
- Fold in the dark chocolate chips or walnuts.
- Divide the batter evenly among the 12 muffin cups. Bake for 18–22 minutes until the tops are deep golden brown and a toothpick inserted into the center comes out clean.
