Ingredients:
- 3 medium ripe bananas, mashed (approx. 300g)
- 1/3 cup (80ml) pure maple syrup or honey
- 1 large egg (50g)
- 1/2 cup (120g) plain Greek yogurt
- 1 tsp (5ml) pure vanilla extract
- 1 1/2 cups (190g) whole wheat pastry flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) sea salt
- 1 tsp (2g) ground cinnamon
- 1 cup (150g) fresh blueberries
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, mash the bananas until smooth but with a few small lumps for texture.
- Whisk in the maple syrup, egg, Greek yogurt, and vanilla extract until the mixture is cohesive and velvety.
- In a separate medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Gently pour the dry ingredients into the wet mixture and use a spatula to fold the batter together until no more streaks of dry flour remain.
- Gently stir in the blueberries, ensuring they are evenly distributed without bruising.
- Divide the batter evenly among 12 muffin cups, filling each about 2/3 full.
- Bake for 18–22 minutes until the tops are golden mahogany and bounce back when lightly pressed.
