Ingredients:

  • 4 medium ripe peaches (approx. 2 lbs / 900g), halved and pitted
  • 3 tbsp honey or maple syrup
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 cups rolled oat granola
  • 2 tbsp unsalted butter, melted
  • 1/4 cup chopped pecans or slivered almonds

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Slice the peaches in half and remove the pits. Place them cut-side up in the baking dish, leaving about an inch of space between each fruit.
  3. In a small bowl, whisk together the honey, cinnamon, vanilla, and salt.
  4. Drizzle the mixture evenly over the peach halves, ensuring the centers where the pits were are well-filled to create a jammy pocket of flavor.
  5. Toss your granola and chopped nuts with melted butter in a bowl until evenly coated.
  6. Mound the granola generously onto the top of each peach.
  7. Bake for 35–40 minutes. Look for the peaches to be tender (pierce easily with a fork) and the granola to be a deep golden brown.
  8. Remove from the oven and let them sit for 5 minutes to allow the syrup to thicken slightly before serving.
