Ingredients:
- 2 lbs Yukon Gold potatoes, scrubbed clean
- 2 tbsp olive oil
- 1 tbsp cornstarch
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
Instructions:
- Cut each potato in half lengthwise, then into quarters, and then into eighths to create 8 uniform wedges per potato. Note: Uniformity equals even cooking
- In a large mixing bowl, whisk together the olive oil, cornstarch, garlic powder, smoked paprika, salt, and black pepper until a smooth paste forms.
- Add the potato wedges to the bowl and toss thoroughly until every wedge is fully encapsulated in the seasoning coating.
- Preheat the air fryer to 400°F (200°C).
- Place the wedges in the air fryer basket in a single layer. Note: Do not stack them or they will steam
- Cook for 20 minutes, shaking the basket halfway through.
- Remove the wedges until they reach a deep mahogany color and feel firm.
