Ingredients:

  • 2 lbs Yukon Gold potatoes, scrubbed clean
  • 2 tbsp olive oil
  • 1 tbsp cornstarch
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper

Instructions:

  1. Cut each potato in half lengthwise, then into quarters, and then into eighths to create 8 uniform wedges per potato. Note: Uniformity equals even cooking
  2. In a large mixing bowl, whisk together the olive oil, cornstarch, garlic powder, smoked paprika, salt, and black pepper until a smooth paste forms.
  3. Add the potato wedges to the bowl and toss thoroughly until every wedge is fully encapsulated in the seasoning coating.
  4. Preheat the air fryer to 400°F (200°C).
  5. Place the wedges in the air fryer basket in a single layer. Note: Do not stack them or they will steam
  6. Cook for 20 minutes, shaking the basket halfway through.
  7. Remove the wedges until they reach a deep mahogany color and feel firm.
